In Ethiopia, food is an act of shared warmth and community. Here is how to enjoy your dish like a local.
Eat with your right hand
No cutlery needed. Tear off a small piece of soft, spongy teff injera.
Pinch and scoop
Use the injera between your fingers to scoop up a tender piece of meat, sweet onion and a glossy coat of sauce.
Save the bottom injera
The injera underneath slowly drinks in the bone broth and spiced ghee. This soaked injera is traditionally cherished as the most delicious part of the dish.
Practise gursha
Feeding a bite to a friend or dining partner is a customary sign of honour, hospitality and affection.
Prefer a fork? Just ask. Cutlery is always available.

"Driven by faith, fueled by innovation. Entrepreneur with purpose."
Ephrem started Sinq with one belief: a meal should leave you better than it found you. That means honest ingredients, a kitchen with nothing to hide, and the kind of welcome that makes people want to come back. His Ethiopian roots shaped how he cooks, but it is these values, more than any tradition, that guide every plate.
"True nourishment should restore you from the inside out and taste extraordinary. When ancient wisdom, purposeful ingredients, and hospitality unite on a plate, food becomes medicine."
Food That Gives Back More Than It Takes
We cook the way we believe food should be cooked: from scratch, with real ingredients, and with nothing to hide. These are the values behind every plate.
Restorative Food
Our injera is whole-grain teff and water, fermented slowly the old way. Our meat dishes simmer in bone broths we make ourselves. It is food that fills you up without weighing you down.
Natural Flavour
Our flavour comes from spices we roast in house, fresh garlic, ginger and herbs, and butter we spice ourselves. Our berbere and shiro are imported from one trusted, premium producer. No flavour enhancers, nothing artificial, no shortcuts.
A Transparent Kitchen
A window into our kitchen lets you see your meal being made. Ask us what is in any dish and we will tell you, right down to the oil we cook with and where our spices come from. Nothing is hidden, because there is nothing to hide.

Questions About Our Food?
Honest answers about our food, our kitchen and how we cook.
Ask a QuestionYes. No wheat flour or gluten-containing ingredients come into our kitchen, and our injera is made only from teff flour and water. Many Ethiopian restaurants blend wheat into their injera to cut costs. We never will. We are working towards formal coeliac certification, so if you have a severe allergy, please talk to us when you order and we will take care of you.
A significant portion of our menu is naturally plant-based. Our Vegan Platter brings together six stews (spicy red lentils, yellow split peas, green lentils, spinach, carrot and potato, and beetroot) with a fresh tomato salad. Vegan stews are cooked in vegetable stock and prepared separately from our meat dishes, and kategna can be made with olive oil instead of ghee.
Walk-ins are always warmly welcomed. For Friday and Saturday dinner services or groups of four or more, we recommend reserving your table ahead of time through our online booking link to guarantee seating.
